PECORINO 'ARIES' CIAVOLICH 2022 DESCRIPTION

Ciavolich winery's Pecorino 'Aries' is a label that expresses the fragrant, young and fruity character of this ancient native grape variety. For a long time forgotten, until it almost disappeared, Pecorino has been rediscovered and enhanced in recent decades, bringing out a unique personality. Today it is one of the most interesting white wines of central Italy, particularly appreciated for its aromatic richness, clear freshness and extraordinary longevity. Excellent when tasted young, it can be kept in the cellar for several years without fear. The more patient will discover its elegant tertiary evolutionary notes.

"Aries' is a Pecorino that comes from a family-run winery that has been producing wine in the Abruzzo region for over a century. The Ciavolich estate owns around 50 hectares, 35 of which are dedicated to viticulture, planted with the grape varieties historically present in Abruzzo. The wine comes from a plot of about one hectare, located in Pianella di Loreto Aprutino, in one of the most vocated areas in the entire region for the production of Pecorino. The cool winds that descend from the Gran Sasso Massif and the mild sea breezes that come up from the coast create a unique microclimate, characterised by wide temperature ranges. The vines are trained partly with the Abruzzi pergola and partly with Guyot, on medium-textured soils of a clay-limestone nature. Harvesting is carried out manually in the early hours of the morning and after soft pressing, the must ferments in temperature-controlled stainless steel tanks. The wine matures in steel tanks, except for a small part in tonneaux, and after blending it completes its refinement with a few months in the bottle.

Ciavolich's white Pecorino 'Aries' is a wine of great immediacy and pleasantness of taste, perfectly expressing the best varietal characteristics of the vine and the production area. To the eye, it has a beautiful straw-yellow colour with luminous greenish reflections, denoting its youth. On the nose, it offers aromas of ripe citrus fruits, white-fleshed fruit, peach, carrot melon, nuances of tropical fruit and hints of aromatic herbs from the Mediterranean maquis. Flowing and intense on the palate, it captivates with an aromatically rich, ample and persistent sip, perfectly balanced by a finish of vibrant freshness.
