CHAMPAGNE EXTRA BRUT GRAND CRU 'DORIEN 45' STEPHANE REGNAULT DESCRIPTION

With its elegant and complex style, Stephane Regnault's Champagne Grand Cru 'Dorien 45' Extra Brut is capable of captivating from the very first taste. This bubbly is made from only Chardonnay grapes from the Les Hautes-Mottes vineyard, located within the Grand Cru village of Le Mesnil-sur-Oger on the Côte des Blancs. Like other Champagnes from the vigneron, the bottle's name pays homage to modal jazz, another great passion of Stephane's. Depending on the musical mode, the musician can imprint a different style on the same piece, just like Stephane, who manages to make the lieu-dits he cultivates express themselves differently.
Stephane Regnault Champagne Grand Cru Extra Brut 'Dorien 45' is made exclusively from Chardonnay grapes harvested in the vineyard of Les Hautes-Mottes, in Le Mesnil-sur-Oger, where the topsoil is very fine and the subsoil is very pure and compact chalk. Vinification follows a non-interventionist oenological approach, with spontaneous alcoholic fermentation in barrels and complete malolactic fermentation. After a short period of maturation, the vintage wine is topped up with 35% vin de reserve and then placed in the bottle for fermentation according to the Champenoise Method. The wine rests on the lees for at least 36 months, after which it is degorgement and dosage Extra Brut.
Stephane Regnault's Champagne Grand Cru Extra Brut 'Dorien 45' has a straw-yellow colour with brilliant reflections. The nose expands on sensations of citrus fruits, white-fleshed fruit, fresh flowers and dried fruit, combined with decisive chalky mineral puffs. In the mouth it is dry, refreshing and flowing, supported by a pleasant sapid-mineral vein that lends tension. The finish is very long and elegant on fruity and floral perceptions.
