The celebrated Tuscan winery Tenuta San Guido introduces the red wine 'Le Difese,' a blend of Cabernet Sauvignon and Sangiovese that makes pleasantness and versatility its hallmarks. This label, launched with the 2002 vintage, takes its name from the term for wild boar's teeth and is an exceptional blend of Tuscan Mediterranean and French style.
Tenuta San Guido's 'Le Difese' comes from a blend of Cabernet Sauvignon and Sangiovese, varieties grown on soils with varied morphological characteristics, partially clayey and with a general abundance of limestone, marl and stones. The rows, located between 100 and 300 meters above sea level, enjoy excellent southern and southwestern exposure, and the harvest is carried out manually with careful selection of the bunches, beginning with Cabernet Sauvignon and ending with Sangiovese. In the winery, after a second sorting, the grapes undergo soft crushing and destemming, followed by temperature-controlled alcoholic fermentation in stainless steel tanks, with 14-18 days of maceration on the skins and complete malolactic fermentation also taking place. The subsequent ageing period of almost a year takes place in French oak barriques previously used for the maturation of 'Sassicaia' and 'Guidalberto'.
Supertuscan 'Le Difese' Tenuta San Guido is deep ruby red in colour. The nose offers fruity hints of blackberry and cherry that blend with hints of chocolate and herbs. Round, full and fresh, the sip, with a sweet tannic texture and fine savoury trail. This is a Tuscan red wine of great versatility, which can be paired as well with boards of cured meats and particularly aged cheeses as with first and second courses of various types of meat.
