Poggio Le Volpi's Roma Rosato is the latest achievement of this interesting Latium winery, which runs an estate Monteporzio Catone, not far from Rome. The winery wanted to restore splendor to an area with a great viticultural vocation, which since the days of ancient Rome constituted one of the excellences of the region. Always committed to the enhancement of the vines historically present in these lands, Poggio alle Volpi also wanted to try its hand at producing a rosé faithful to tradition, made with a bloodletting. It is a label with a rich, intense and fruity profile, possessing a pleasant immediacy of drinking.
Poggio Le Volpi's Rosato Roma is made from grapes that come from the estate's Montepulciano and other red grape varieties, cultivated in hilly areas, on soils of ancient volcanic origin composed, of sands, pozzolans and clays, well draining and particularly rich in minerals useful to the vines. This is a rosé made by the ancient method of "salasso," an ancient oenological choice that has been almost completely abandoned today, as people prefer to make a rosé from the vineyard, choosing the coolest exposures, slightly earlier harvest times, rather than relying on cellar practices. Bloodletting, in fact, involves the withdrawal of a portion of must in the first hours of red wine making. This is a technique that was used in the past, when people worked with high yields per hectare and needed to concentrate the red wines by draining the musts and thus also making a rosé. Fermentation takes place in stainless steel tanks at a controlled temperature of 12-14 °C. Before bottling, the wine matures for several months in cement tanks.
Roma Rosato, made by Poggio Le Volpi, is by nature a wine with a decidedly gastronomic vocation, which goes very well with seafood salads, first courses with shrimp and scampi, or with a slice of grilled salmon. To the eye it has a light pink color with luminous reflections. The nose gives rather broad and intense aromas dominated by notes of small red berries, cherry, red currant, morello cherry, enhanced by delicate floral nuances, reminiscent of iris and rose petals. The palate has a good structure, with a pleasant fruity richness, juicy and harmonious, leading towards a lingering, savory finish with good freshness.
